My dessert invention — Lemon Square Inipit Trifle!

Look at what greeted me the moment I arrived home from Singapore — a big box full of Lemon Square Inipit!

Lemon Square InipitBut with this box comes a mission: I need to create an original dessert using Lemon Square Inipit! Now my regular readers know that I don’t cook and so this is EXTRA challenging for me, hahaha! Inipit literally means “pressed” in Filipino. It’s a flat pastry made of flour, milk, lard, and some sugar. Lemon Square’s Inipit has two layers of sponge cakes with rich and creamy filling pressed in between. They’re super soft, light, and flavorful — perfect as a snack or dessert!

Lemon Square Inipit DessertBut what I don’t have in cooking skills I make up for in imagination. I have a lot of imagination, particularly imagining a yummy dessert in my head that’s easy to do and has NO cooking involved, hahaha! So anyway, I thought of making a Trifle using Lemon Square Inipit. I dub it as Lemon Square Inipit Trifle! A Trifle is an English dessert that is usually made with custard, fruit, sponge cake, and whipped cream. You only need 3 ingredients for this dessert: Lemon Square Inipit, all-purpose cream, and fruits. Tools? You only need containers and a bread knife.

Lemon Square Inipit DessertThis particular dessert lets me use all 6 Lemon Square Inipit variants: Pandan, Queso, Ube Pastillas, Custard, Chocolate, and Lemon.

Lemon Square Inipit DessertStep 1: Unwrap the Lemon Square Inipit cakes and lay them flat on a plate or any clean surface.

Lemon Square Inipit DessertStep 2: Thinly slice your preferred fruits so you can use them to create layers. In this case I used canned peaches. Slice the Lemon Square Inipit cakes into 3 segments.

Lemon Square Inipit DessertStep 3: Fill up the bottom of your container with Inipit cubes, alternating flavors. You can adjust the number of Inipit cakes to use depending on the size of your container.

Lemon Square Inipit DessertStep 4: Pour all-purpose cream over the Inipit cubes, fully soaking them. Cover the layer with fruit slices.

Lemon Square Inipit DessertStep 5: Pour cream over the fruit slices and top with more Inipit cubes. Completely cover the top of the second layer of Inipit cubes with cream and then top with more sliced fruits.

Lemon Square Inipit DessertStep 6: Chill in the refrigerator for 2-3 hours or until the cream stiffens.

Lemon Square Inipit DessertVoila! You now have Lemon Square Inipit Trifle! Slice and enjoy! It’s super yummy… the unsweetened cream lets all the individual flavors of Lemon Square Inipit shine through and the peaches give the dessert a bit of tartness to complement the sweet cakes and fillings. This is so easy to do even kids can make it! So the next time your kids say they’re bored, just whip out some Lemon Square Inipit and let their imagination take over!
