Festa Italiana at Cucina, Marco Polo Ortigas

Last June 10, my daughter and I attended a Master Cooking Demo by Chef Andrea Delzanno at Marco Polo Ortigas. Some years ago I would’ve passed up this chance, thinking what’s the use? I don’t cook anyway. But things have changed. I’ve been cooking for almost a year now. I want to improve. I was sure I’d learn a lot watching Chef Andrea Delzanno in action.

Cucina Festa Italiana Marco Polo OrtigasThe cooking demo was held at Vu’s Sky Bar and Lounge on the 45th floor. I went with my daughter. Participation fee is P2,300 per person inclusive of a buffet lunch in Cucina.

Cucina Festa Italiana Marco Polo OrtigasIt was pretty awesome watching Chef Andrea. He explained each step as he was cooking and gave a lot of useful tips. He cooked 3 Italian dishes that day. We were all given recipe cards so we could try to recreate them at home.

Cucina Festa Italiana Marco Polo OrtigasThe first dish was Papa Al Pomodoro (Traditional Tomato Soup). He used both canned and fresh tomatoes for this and processed all the ingredients in a blender. He topped the soup with the most incredible garlic bread I’ve ever tasted.

Cucina Festa Italiana Marco Polo OrtigasNext he cooked Linguine Alle Vongole (Linguini with Clams, Garlic, Olive Oil, Chili, and Parsley). It seemed so simple and he cooked it so fast. The ingredients are all very easy to find too. It was sooo good. I’d like to try making this at home but I would need dry white wine for it.

Cucina Festa Italiana Marco Polo OrtigasLast but not least was dessert. Chef Andrea prepared Tiramisu (Mascarpone Cream with Lady Fingers, Espresso, and Cocoa Powder). He said he used his grandmother’s recipe because she would make it every Sunday when he was growing up. Authentic Tiramisu doesn’t use gelatin so it kind of melts when you slice it. It looks mushy but wow, this trumps every other Tiramisu I’ve eaten in my lifetime.

Cucina Festa Italiana Marco Polo OrtigasAfter the cooking demo, we headed for Cucina for a buffet lunch. Aside from the usual spread, there were several Italian dishes by Chef Andrea… like this Braised Chicken Cacciatora Style.

I love how there’s always something new and different at Cucina. It’s never the same buffet whenever I go back.
