When someone says ribs here in Manila, the first restaurant that comes to mind is Racks. I remember dining at Racks for the first time back in the 90’s when I was still in college. It’s just one of those places that has always been around. I now have a 16-year old kid and yes — it’s still going! Plus, they’re always coming up with new stuff to try and enjoy. This time, we’re here for the Racks Smoked Chipotle Ribs.
My kids are bottomless pits so we each ordered our own serving of Racks Smoked Chipotle Ribs (P435 for a Quarter). The super helpful server told us that we’re better off ordering 4 Quarter servings (total P1,740) instead of a Full serving (P1,730 for 4 quarter racks, 4 rice, and 1 large side dish). This is because a Quarter serving comes with rice and a regular side dish, so each person can have the side dish he/she wants. So that was what we did!
Aside from ribs, we ordered The Onion Brick (P255) which is quite arguably the best onion rings in town. This is how we like our onion rings — thinly sliced, super crispy, and tasty even without sauce! This has always been my peg when cooking onion rings at home. Of course, Racks’ trademark BBQ sauce makes it even better.
Since it’s Oktoberfest at Racks, hubby decided to try Kaiser Beer (P160) to go with the ribs. I’m not really a beer drinker but I liked the mild, slightly sweet flavor of Kaiser Beer.
So this is how a Quarter serving of Racks Smoked Chipotle Ribs looks like. Hubby opted for Corn on the Cob as his side, I got Broccoli and Cheese, our daughter picked Mashed Potatoes, while our son had Potato Salad. Everyone got what they wanted so we were all happy campers! 😀
Here’s a look at the quarter rack up close. Fall-off-the-bone tender and basted with a slightly sweet and spicy chipotle barbecue sauce… yum! It made my Sunday cheat day well worth it lol.
