I was invited to the preview luncheon of EDSA Shangri-la Hotel’s Swiss Week at Heat. Heat is EDSA Shangri-la’s buffet restaurant and I’ve actually eaten there many times in the past.
Manila-based Swiss chefs Thomas Wenger (former executive chef Mandarin Oriental Manila) and Martin Kaspar (owner of L’Entrecote Restaurant) will prepare authentic Swiss dishes to be incorporated into the Heat buffet spread from Nov. 13 to 28, 2014.
Then we had a soup trio — Basler Mehsluppe (Roasted Flour Soup “Basle Style), Bundner Gerstensuppe (Barley Soup from Grisons), and Berner Erbensuppe mit Gnagi (Bernese Green Pea Soup with Salted Pork Knuckle). My favorite was the Barley Soup (the white one in the middle). It was milky and savory without being thick and cloying. Second runner up goes to the Green Pea Soup although the pork tasted more like tender sweet ham rather than salted pork knuckle. It tasted like freshly pureed green peas… sooo good. The Roasted Flour Soup had a gamey scent and aftertaste which reminded me of lamb (and I hate lamb).
Before moving on to the main course, we had a look at the Raclette Station. There was a huge semi-circle of cheese, the flat side of which was being heated to a melty gooey texture.
Then the chef scraped off the melty surface onto a small plate with some baby potatoes, pickles, and onions.
Voila, the finished product! OMG. This is the best cheese dish I’ve ever tasted. I had 3 servings and I wanted more! I’d trade in the entire lunch menu for this I tell you. It’s super worth eating at Heat during Swiss Week if only for the Raclette Station!!!
Venison Stew! It’s cooked “Hunter” style with braised red cabbage, poached apple, and spaetzli. I wonder if it’s really deer meat. It was very tender and it tasted like beef.
For dessert, we had Vacherin Vermicelle. It’s chestnut puree layered with vacherin (a kind of cheese) and covered with chestnut whipped cream. There were even whole chestnuts on the side.
